Chocolate zucchini muffins

3 eggs
2 cups sugar
1 cup vegetable oil
1/3 cup unsweetened cocoa powder
1 1/2 teaspoons vanilla extract
2 cups grated zucchini (I used one large zucchini)
3 cups all-purpose flour (I used 1 1/2 cups white flour and 1 1/2 cups wheat flour)
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

Pre-heat oven to 350. Mix all ingredients together. Pour into grease or paper lined muffin cups. Bake for 20-25 minutes. Enjoy! Top with mini chocolate chips or chopped walnuts, if desired.
